Maple Spruce Porkchops

Serves 4

Ingredients

  • 4 bone-in pork chops
  • 2 tablespoons olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 2 medium apples
  • 1 large yellow onion
  • ⅓ cup spruce tip-infused maple syrup
  • 1 tablespoon whole-grain mustard
  • 2 tablespoons apple cider vinegar

Instructions

Heat the oven to 400°F. Heat a tablespoon of olive oil in a large skillet over medium-low heat. Add the onion and apples with a pinch of the salt. Cook 6–8 minutes, until just softened. Transfer to a large baking dish.

Season the pork with the remaining salt and pepper. Increase the heat to medium-high, add the remaining oil to the pan, and sear the chops in the same skillet for 1-2 minutes per side, until browned. Adjust the heat as needed. Transfer the pork chops to the baking dish and set them on top of the apples and onions.

Add the maple syrup, mustard, and vinegar to the pan, whisk to combine. Pour the glaze over the pork chops. Transfer the baking dish to the oven and cook for about 10 minutes, or until the pork reaches 145°F.

  1. Rest 5 minutes, then serve the chops with the apples, onions, and pan glaze.
