Sumac Sweet Potato Fries

Sumac Sweet Potato Fries

  • 2 large sweet potatoes
  • 2 tablespoons olive oil
  • 4 tablespoons Baird Farm sumac infused maple syrup
  • 2 teaspoons fresh thyme leaves
  • Kosher salt
  • Black pepper
  • ½ cup Greek yogurt


Preheat oven to 425 F. Scrub the sweet potatoes clean and slice into fry-sized wedges or matchsticks. Add them into a bowl and toss with the olive oil, 2 tablespoons sumac-infused maple syrup, the thyme, ½ teaspoon salt, and a few grinds of black pepper. Spread in a single layer on a baking sheet.

Bake the fries for roughly 30 minutes, tossing the fries around about halfway through cooking. They should be browned and lightly crisp when done. Meanwhile, stir together the remaining 2 tablespoons sumac infused maple syrup with the yogurt. Serve immediately, sprinkled with additional salt and with the yogurt dipping sauce on the side.
